Week Four Hightlights...vision, weight loss, and unbearable heat

This last week brought cute new eyeglasses as seen in the picture to the left and a smidgen of weight loss. Yay for both! Unfortunately the weather here has finally declared itself unbearable (102 @ 9 am!!!). So my usual routine of exercising at 9 am is now impossible due to the blistering hot sun. As a result my weekly exercise has gone from its usual 7 hours to like 2 hours :( Thankfully I have a wonderful mom who also recognizes that this is a problem and is willing to help me out. She calls me everyday at 6 am to wake me up! What a sweetheart. I couldn't do this without her.

HG's Famous Bowl

A Bowl in One!

A ginormous bowl that includes fried items, corn niblets, gravy and cheese cannot POSSIBLY be Hungry Girl approved, can it? Ummmm, YES it can. We promise! Our swapped-out version of this Kentucky Fried MESS will save you more than half the calories and most of the fat. We rock! But we must confess, this recipe was inspired by one of our faithful subscribers, who emailed in to tell us that she and her boyfriend make their own version of these bowls at home. Thanks, Angie!

Ingredients:

2 cupa cubed butternut squash

¼ cup skim milk

¼ cup canned corn niblets; heated

¼ cup fat-free cheese, cheddar or American; shredded (such as Kraft fat free shredded cheddar)

2 oz. Heinz Fat Free Classic Chicken Gravy; heated

2 Morningstar Farms Chik Patties, Original or Boca Chick'n Patties

salt and pepper; to taste

Directions:

In a covered dish, microwave butternut squash pieces for 8-12 minutes (until tender) in a very small amount of water. Drain very well and then mash squash with the skim milk and a little salt. Place mashed squash in a medium-sized bowl. Next, sprinkle corn niblets over your squash. Prepare "chicken" patty according to package and cut into small pieces. Place patty pieces on top of your corn-topped squash. Drizzle with gravy. Top with shredded cheese. Pop the bowl back into the microwave for 30 seconds and enjoy!

Serving it up with California Style Mixed Veggies and a side of cantaloupe wedges makes for a satisfying AND guilt-free meal! Yay!

Also, I would love to train for this celebration of a race. My current goal is to train for a 5k. Even thought one is 7.5 It will give me a race to train for...unless there are big hills. Then you might not have a deal :P
